Go West recently managed the Food on the Edge symposium in Galway. Food on the Edge is a two day symposium that took place in Galway, Ireland, taking place on Mon 19th & Tues 20th October 2015. It was for chefs & food enthusiasts from all around the world who want to create a better global network. It was a coming together of chefs to listen, talk and debate about the future of food in our industry and on our planet.
Taking its inspiration from TED’s 15-minute talks, a bold new food conference called ‘Food on the Edge’ invited the world’s top chefs to Galway to discuss the future of food.
Over the past decade Galway has become an interesting and attractive food destination, its beautiful location on the west coast and its prominent position along the Wild Atlantic Way has been taken advantage of by a number of restauranteurs.
JP McMahon of EAT Galway and creator of Food on the Edge said that persuading chefs to come to Ireland was not too difficult, they signed up to make the trip very willingly, some from as far a field as Canada and Australia. André Chiang from Singapore and Elena Arzak from Spain were among the attendees.
The fact that it is taking place on a Monday and Tuesday is particularly useful for people within the catering industry, this was a chefs’ symposium intended to inspire Irish chefs of the next generation and hopefully show that they can stay in their native country and thrive.
The festival is only in its first year, but had an extremely impressive line-up, a mix of Irish and visiting chefs all took to the stage and give their opinion on “The Future of Food”.
Go West were the conference managers with overall responsibility for all Speakers at the conference as well as managing conference registration. The 2 days saw some 350 delegates, 54 international speakers, media and invited guests.

2015 Conference Porgramme
The programme was broad and varied for speakers to ensure a unique and memorable experience while here in Ireland:
Sunday 18th October: Welcome dinner for Speakers & Guests at CAVA Bodega.
Monday 19th October: Symposium all day and that evening. Delegates and Speakers were free to eat in a restaurant of their choosing. After dinner, there was an official meet up in a popular city centre pub, Roisin Dubh.
Tuesday 20th October: Symposium all day followed by our concluding party ‘OVER THE EDGE’ – A night of fun, food, drink & entertainment.
Wednesday 21st October: During the day there was a trip to visit local suppliers and places of interest (Speakers and Media). That evening we arranged an exclusive scenic river cruise with dinner, food and entertainment.
Thursday 22nd October: Day trip to the Aran Islands.
